  • 2 cups cooked white rice (preferably day-old)
  • 4 large eggs
  • 1 cup mixed vegetables (such as peas and carrots)
  • 2 teaspoons minced garlic
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 2 green onions, finely chopped


Instructions

  1. If using freshly cooked rice, spread it on a baking sheet and let it cool for about 30 minutes.
  2. Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Scramble the eggs until fully cooked, then remove them from the skillet and set aside.
  3. In the same skillet, add another tablespoon of vegetable oil along with minced garlic and mixed vegetables. Cook for 3-4 minutes until tender.
  4. Add the cooled rice to the skillet, breaking up any clumps. Stir in soy sauce and sesame oil, cooking for another 3-5 minutes until heated through.
  5. Mix in the scrambled eggs and chopped green onions. Adjust seasoning with salt and pepper as desired before serving hot.
