Ingredients
- 2 cups cooked white rice (preferably day-old)
- 4 large eggs
- 1 cup mixed vegetables (such as peas and carrots)

- 1 teaspoon sesame oil
- 2 tablespoons vegetable oil
- Salt and pepper to taste
- 2 green onions, finely chopped
Instructions
- If using freshly cooked rice, spread it on a baking sheet and let it cool for about 30 minutes.
- Heat 1 tablespoon of vegetable oil in a skillet over medium heat. Scramble the eggs until fully cooked, then remove them from the skillet and set aside.
- In the same skillet, add another tablespoon of vegetable oil along with minced garlic and mixed vegetables. Cook for 3-4 minutes until tender.
- Add the cooled rice to the skillet, breaking up any clumps. Stir in soy sauce and sesame oil, cooking for another 3-5 minutes until heated through.
- Mix in the scrambled eggs and chopped green onions. Adjust seasoning with salt and pepper as desired before serving hot.
