  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 cups grated zucchini
  • 1 teaspoon vanilla extract
  • Optional: ½ cup chopped walnuts or pecans
  • Streusel Topping: ¼ cup all-purpose flour, 2 tablespoons granulated sugar, 2 tablespoons brown sugar, packed, 1 teaspoon ground cinnamon, 2 tablespoons cold butter, cubed


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In one bowl, whisk together dry ingredients: flour, baking powder, baking soda, salt, cinnamon.
  3. In another bowl, mix sugars and oil until smooth; then add eggs and combine well.
  4. Stir in grated zucchini and vanilla until blended.
  5. Gradually fold in the dry mixture until just combined.
  6. Fill muffin cups two-thirds full and sprinkle with streusel topping made from flour, sugars, cinnamon, and cold butter.
  7. Bake for 20-25 minutes until a toothpick comes out clean.
